Many familiar Melbourne names are waving waves with new concepts. Prolific restaurateur Con Christopoulos adds a Francophile bar to his portfolio with the opening of French Saloon; at the brilliantly named Lawyers, Guns & Money, chef Victor Liong serves up congee and Hong Kong-style French toast at the daytime-only Chinese restaurant.
