This Creamy Avocado Lime Tart will make you think twice about making a traditional citrus dessert--why, when you can add avocado and make it special? These tarts are easy to make and taste scrumptious cold--making them ideal for a summertime dessert.

Note that there is a three hour chill time to make this recipe, and be sure to plan accordingly.
Ingredients
1 box of pie dough (two pie shells)
1 14 oz. can of sweetened condensed milk
2 avocados
2 large limes
Sanding sugar for garnish
Preparation
Using four 4” tart pans, bake the pie dough in them according to box instructions.
In a food processor, combine 2 mashed avocados and sweetened condensed milk and pulse until well integrated.
Juice one lime, and add the juice to the mixture (this is usually ¼ of a cup of lime juice if one lime doesn’t yield enough, use half of the other lime as well.
Pulse until consistency is creamy and color is even.
Place in a mixing bowl and chill for at least three hours.
Once chilled, add to pre-cooked pie shells in the tart pans.
Slice the second lime into thin layers and cut them in half, use for garnish on top of the tart and sprinkle the tart with sanding sugar.
Serve cold.
