FOOD TECH — A group of scientists and agriculture experts at Washington State University are trying to change the way we grow and consume wheat with a new cooperative called The Bread Lab. Headed by geneticist Dr. Stephen Jones and supported by chefs like Dan Barber (Blue Hill at Stone Barns), The Bread Lab aims to engineer high-yield, low-input, great-tasting wheat. [Bon Appétit]

BURGERS — The James Beard Foundation is kicking off the Better Burger Project this summer, an effort to get people to consume less meat by challenging chefs to create "better burgers" that are made with a mixture of meat and chopped mushrooms. The project, which will run from Memorial Day through the end of July, will enlist different chefs and include a heavy social media aspect, in which people can vote for their favorite burgers.
