Michelin gave a star to a ramen restaurant for the first time ever.
Michelin has announced the contents of its new 2016 guide for Tokyo, and the number of three-starred restaurants in the Japanese capital climbed from 12 to 13 with the promotion of Kohaku, a restaurant specializing in Japanese kaiseki. There are also three new two-starred establishments on a list of 51 two-starred selections: Beige Alain Ducasse and Momonoki both rose from one star while Dominique Bouchet is a new addition to the list.
This year Tokyo has 153 one-starred restaurants (down from 161 last year) with 17 new ones, including two promoted from Bib Gourmand status, a ranking that focuses on restaurants that cost 5,000 Japanese Yen (roughly $40 U.S.) or less. There are 343 Bib Gourmand restaurants in Tokyo, with 83 new ones this year and cuisines ranging from gyoza to Peruvian. Tsuta, which made the jump to one star this year and draws long lines consistently, is the first ramen restaurant to ever receive a Michelin star.
