The Brooklyn pizzeria is expanding its reach.
The Columbus, Ohio, outpost for Paulie Gee's, part of a nationwide expansion for the essential Brooklyn-based pizzeria, is on track to open this fall on the city's North High Street. The new location is owned and operated by Terry Gibbs, who worked in the Brooklyn restaurant for a year to get a grasp of the concept. Gibbs told Columbus Underground the first time he at Paulie Gee's pizza was an eye-opening experience.
"It felt like I was eating pizza for the first time — it made the music sound better, the people next to me look better, just made everything better," Gibbs said. "I wanted to bring it to Columbus. I was sold after that."
The new pizzeria will take up a 2,400-square-foot space and install a wood-burning Stefano Ferrara oven, and the menu will consist of pizzas found at the original restaurant in Brooklyn, plus a few creations from Gibbs. To compliment the Neapolitan-style pies, the bar will pour local beers and an extensive wine selection.
Paul Giannone opened the first Paulie Gee's in 2010, and he also has franchise leases signed for Baltimore and Miami. Giannone is eyeing locations in Chicago, Oakland, Portland, Los Angeles, Las Vegas, and Long Island, as well.
