If you have a good sense of smell, and like your cookies moist and chewy, use my trick of taking them out of the oven just after the first hint of chocolate chip cookie hits the air. Be sure to let them cool fully before serving, ideally 10 minutes.
Ingredients
2 tablespoons ground flax
3 tablespoons warm water.1 1/4 cup organic all purpose flour
1/4 teaspoon baking soda
1/8 teaspoon sea salt
1/2 cup organic brown sugar
1/4 cup organic white sugar (sugar in the raw also works)
1 stick (1/2 Cup) of Earth Balance
1 teaspoon vanilla extract
1 cup vegan dark chocolate chips
Preparation
Mix flax with 3 T. warm water and allow to sit for two minutes.
Sift dry ingredients.
Assemble wet ingredients then whisk thoroughly with a spatula. (Do not beat).
Mix dry and wet ingredients together. (Again with a spatula, not an electric mixer)
At this point, you should have a nice stiff mousse-like dough.
Mix in your vegan chocolate chips.
Form your cookie dough with wet hands and place (with a good amount of space between them) on a greased cookie sheet.
Bake for 20-23 minutes at 300 degrees until golden brown.
