São Paulo is arguably the most important food city in Latin America: It's ranked number eight on World Cities Culture Forum's list of cities with the highest overall number of restaurants — more than 12,000 in all. Not for nothing, Michelin launched its first-ever Latin America guide here last year.
And it's a melting pot of food references: Millions of residents are direct descendants of Portuguese, Italian, Japanese, Syrian, and Lebanese immigrants and refugees. The city's culinary identity comes from this mix of cultures, which coexist harmoniously in more than 90 neighborhoods. Even though some of them — like the centrally located and tourist-friendly Pinheiros and Jardins — boast a wealth of the best spots to eat and drink, away from downtown one can still find hidden gems — many that even locals are just now discovering.
This list encompasses 38 restaurants, dishes, and culinary experiences that define the act of eating in a city where going out for dinner is maybe the number one form of entertainment. It includes recommendations for traditional recipes under threat of extinction, modern novelties, daily staples, and dishes surprising even to paulistanos. There's sushi, deep-fried dumplings, sfihas, acarajés, and even Amazonian ants: an ideal mix for such a diverse city.
